Cans fire roasted diced tomatoes
1 Pkg
Aneto chicken broth
1 Tbsp
Tomato paste
½ Tsp
Chili powder
½ Tsp
Onion powder
1 Tsp
Cumin

Canned black beans, drained and rinsed
1 ½ Cups corn kernels

Rotisserie Chicken, pulled or diced
Salt And Pepper

Cooked Matiz paella rice

2 oz. dried guajillo chili peppers

2 oz. dried ancho chili peppers

2 cups. Aneto Fish Broth

3 tbsp. olive oil

8 garlic cloves, peeled and minced

1 cup. yellow onion, peeled and minced

1 tsp. cumin

2 tsp. dried oregano

4 cups. Aneto Chicken Broth

3 cups. canned hominy

1 lb. fresh shrimp

Shredded cabbage, chopped cilantro, chopped red onion, sliced radishes, diced avocado, lime wedges, and tortillas, for topping

Instructions:
  1. Place dried chilies in a medium saucepan, cover with fish broth, and bring to a boil over medium-high heat. Cook for 10 minutes, remove from the heat, and allow to steep until the peppers have softened.
  2. Remove softened peppers from the broth and place in a food processor. Reserve and set the broth aside.  
  3. Add the olive oil, garlic, onion, cumin, and oregano to the food processor and blend, creating a smooth paste.
  4. Place the paste in a large pot or Dutch oven, heat over medium-high heat, and sauté for 1-2 minutes or until fragrant.
  5. Add the reserved broth and chicken broth, whisk to combine, and bring to a simmer. Simmer for 20 minutes, whisking occasionally.
  6. Add the hominy and shrimp to the pot, stir to combine, and cook for 10-15 minutes or until the shrimp is cooked through.
  7. Divide soup between bowls and top with cabbage, cilantro, onion, radishes, avocado, etc… before serving.

Pozole is a hearty soup made by combining and simmering chili peppers, garlic, onions, and savory seasonings with rich broth (we used both Aneto Fish Broth & Chicken broth), hominy and protein. This creates a warming, filling, and satisfyingly simple soup, perfect for winter.
